Serves 6 as an appetizer

This dish will be the hit of any gathering. Perfect for Super bowl snacking with tortillas or chips. If you have a fondue pot or chafing dish, use it, but if you don’t own one of these items make this anyway and serve it in whatever shallow dish you have. I promise it will go so fast, that it won’t have time to get cold. Great with beer!

1/4 pound fresh spicy pork sausage (or fresh, uncooked chorizo if you can find it)
1/2 pound white cheddar or Jack cheese
1/4 cup dry white wine
1/4 cup of your favorite green salsa (I like Herdez)

1. Remove the sausage from its casing and place in a heavy skillet. Turn the heat to medium and brown the sausage, crumbling with a fork as it cooks, until no trace of pink remains. Set aside on paper towels to drain.

2. Grate the cheese and place it in a small, heavy saucepan over medium-low heat. Add the wine and heat slowly, stirring as cheese melts until the mixture is smooth.

3. Stir in the chorizo and the green salsa, and serve immediately, hot.
